Tips On How To Make Sticky Rice In Rice Cooker

Here are some significant advice you must note for cooking sticky rice before we dive into the making procedures:

  • Be careful from the beginning of your preparation to the end, it is really sticky!
  • To prevent sticking when handling your rice, you must wet your cooking utensils and your hand.
  • Lining the plate or dish with parchment paper is not a bad idea.
  • Make sure it is covered and it stays warm before serving or adding to another recipe because it dries out and hardens quickly more than expected at room temperature.
  • Hardened glutinous rice can be very hard to digest, so it is best to serve it hot rather than cold.

Step 1 – The Cleaning

To remove the excess starch from the outside of the rice, you must wash the rice completely, as in the traditional method otherwise you will end up with the rice all stuck together.

Depending on your rice cooker, the amount of water you need to use may vary, so place the dry rice in a big bowl and cover with copious amount of tap water, feel free to experiment until you get it just the way you wanted.

To get the water around each grain, move the rice around with your fingers and you will notice that the water goes cloudy little by little and drain off the cloudy water.

Repeat this same procedure numerous time until the water is reasonably clear.

Let the rice settle and rest for at least 40 minutes to 4hour with water after the water looks clean enough. This process is known as soaking.

What’s in the soak?

There is a huge difference between soaking and rinsing, soaking makes the grain fluffier when it is cooked and shortens the cooking time.

But on the other hand, rinsing  is not mandatory nowadays as the current processing technology provides the cleansing of organic rice.

Step 2 – Cooking

Cover with water at room temperature after putting rice into the bowl and allowing to soak.

If the rice is an old crop, you can soak for longer or even overnight if you intend to cook the rice in the morning.

Do not soak rice that the bran is still on, that is unpolished rice. If you soak any rice that is not white rice for more than 2-3 hours, it will start to ferment and it will go bad.

If you are comfortable to leave your soaked clean rice overnight, then you can, it’s better that way.

Step 3 – Timing

Drain off the water that you had used for soaking and quickly rinse it with the tap water. Place the rice in the bamboo rice cooker basket or sieve after shaking off every loose water.

NOTE: Wash your bamboo basket or sieve with mildly soapy water if you just got it brand new.

Rinse with clean water thoroughly as fast as you can after washing.

Use a cheesecloth or muslin to line the basket first and put the rice into the cloth. This is done because some baskets have large enough gaps for the dry rice to fall through so therefore, the holes that are in the basket must be considered carefully.

The rice will cook perfectly, as the steam will just pass straight through the muslin anyway as long as you close the top with excess cloth, then place the basket into the normal rice cooking container inside the rice cooker.

Be careful not to let water touch the rice inside when you rinse halfway up the base of the basket.

Do not use too much water because if you do, the rice will be wet at the bottom and too little will not create enough steam to cook the rice. Then carefully close the lid and cook the rice on the regular white rice program – ignore any glutinous rice special programs for this method.

Remove the rice when the rice cooker has finished it’s program. If you are not using muslin, take extra precautions not to burn yourself lifting out the basket but if you’re using it, then you are a bit safer.

You will have to wait for approximately 15 minutes if your rice cooker doesn’t offer the smart timing feature which automatically switches into the “warm” mode.

Carefully try to open the lid when it’s half way of the cooking time and stir the rice again then dab it with your finger to ensure its consistency.

After 15 minutes, turn off the rice cooker and unplug it.

Put off the rice cooker, unplug it after 15 minutes then bring out the rice cooker pot from the cooker and let it sit for 5 more minutes.

Step 4 – Serving

Tip out the rice onto a flat surface or a bowl and fluff it with a fork to allow the steam out.

Pour the cooked sticky rice in a dish in which you can serve with chicken curry, veggies, mushroom salads etc. You can even choose to prepare it with a popular Thai dessert like”Thai mango sweet sticky rice.”

Finally your sticky rice is finely done through the use of a rice cooker.
